My best friend Brittany & I met when we were randomly assigned as roommates our freshman year of college. Ever so often, her family would send her care packages from Honolulu with her favorite goodies, & the one thing I always looked forward to was her grandma’s cookies. “Cinny”cookies are the epitome of the perfect cookie- sweet with a hint of spice (thanks to the nutmeg) and chewy because of the oatmeal. They’re called Cinny because Brittany and her sister could never pronounce Cynthia as little girls, and I’m so happy to have her permission in sharing this recipe with you. They are my absolute favorite thing to come home to at the end of a long day. Let me know if you try them out! P.S… They’re even better frozen!
12 tablespoons of butter (1.5 cubes)
1 1/4 cups packed dark brown sugar
1 large egg
1 tsp. vanilla
1 1/4 cups all-purpose flour
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
2 1/4 cups old fashioned rolled oats
1 c. dark chocolate chips (the Ghirardelli ones are my favorite)
Mix all ingredients together & drop onto cookie sheet- I usually just use a spoonful of batter per cookie. Bake at 350 degrees & take out after 9-10 minutes!
